I created this recipe in efforts to get as many nutrients into my daughter for breakfast- as possible. The idea came from making a simple banana pancake but then adding greens and seeds.
This can be made into muffins, pancakes or waffles. My daughters have been eating these for breakfast almost everyday since they were 6 months old.
Note: Ripe bananas will add sweetness to the waffles. If you are looking for them to be sweeter, try adding 1 tsp of Vanilla Extract and then top off with 100% Pure Maple Syrup.
Since I started giving these to the girls at 6 months of age, they have come to love the taste! Add a little less spinach if you don’t like the taste of spinach.
This batter makes 4-5 waffles.
Ingredients:
1 banana
2 eggs
1 cup spinach
2 tablespoons of rolled oats
1 tablespoon ground flax
1/2 tablespoon chia seeds
1/2 tablespoon cinnamon
Blend together and pour onto waffle maker. Super easy, delicious and healthy!
