Baby Friendly Beet Pancakes

No, this isn’t red velvet and cream cheese (although that sounds delicious!)

These are baby-friendly beet pancakes! 🌱

I’ve been obsessed with making nutrient rich foods for my kids and getting them exposed to as many vegetables and fruits possible. This is their first introduction to beets. I then followed that by beet roti (will post recipe in coming weeks). Luckily, beets are naturally sweet and vibrant in colour! Kids love that stuff 🤍

This recipe is egg-free 🚫 and made with creamy Greek yogurt!

Little Baby Beet Pancakes 🥞 😍

Ingredients:

1 boiled beet (do this ahead of time)
1 cup of plain Greek yogurt
1/4 cup milk of choice (I used oat)
1/2 cup rolled oats
1/2 teaspoon baking powder
1 tablespoon hemp hearts
1 tablespoon ground flax
For children above 1 you can add vanilla extract
(Children under 1 don’t need much “flavours”)

Topping:
Plain Greek Yogurt
For toddlers you can top with Maple Syrup
Hemp hearts

Blend all ingredients in a blender
Let the batter sit and thicken for 5 minutes
Pour into greased griddle or pan on medium/low
Cool until lightly browned on both sides

I find these pancakes pouf up nicely and you can flatten them if you choose to do so.

The inside will be soft and creamy- this is due to the Greek yogurt. Perfect for little ones!
